I am going to start this post by making a huge confession, I confess to all of amazing blog followers and fellow fitness fanatics that I have been a huge slacker this week, yes I am sorry to say I have not worked out since MONDAY! Yes, Monday....Things went downhill Monday night when I fractured my finger playing volleyball, I have had my finger in a splint since Tuesday and have used this as an excuse not to work out... shameful I know, but in my defense I was in way too much pain Tuesday and Wednesday to do anything, as for Thursday and Friday no excuse really. So I am officially holding myself accountable to all of you and getting my a$$ in gear tomorrow, broken finger or not! Ok there, confession done! Now on to more important things like new recipes!
Organic Split Pea Chowder
I am officially in love with this soup so I had to share, I actually got this package of Organic Split Peas from my September Foodie Penpal along with a recipe for the soup, I tried it out last night and was pleasantly surprised by how great it tastes and how easy it was to prepare! The peas and recipe were from the Heirloom Bean Company which is based out of British Columbia.
Ingredients:
280 grams of yellow and green split peas (rinsed and drained)
2 tbsp olive oil
1/2 chopped onion
1/2 copped carrot
1/2 chopped celery
2 garlic cloves
5 cups stock (or water)
1 heaping tbsp of Herbs (Italian Herb Mix works well or whatever you prefer)
salt and pepper to taste
Directions:
- Saute onion, carrot, celery and garlic lightly in oil for 5 minutes in a sauce pan
- add the split peas, stock or water and herbs
- bring to a boil
- cover and simmer for an hour until peas are soft (simmer longer if you want a more creamy consistency)
- add salt and pepper or additional herbs if desired
This recipe make a lot of soup so you will definitely have left overs! It is the perfect hardy fall soup and its organic!
